Sandge is a Maharashtrian Delicacy, it's made by grinding 5 dals(pulses/grams) together.It doesn't have a specific English name.According to Google" Sandge are sun- dried lentil dumplings made during the hot summer months. Spiced and dried to perfection they serve as the perfect pantry savior to create a rich aromatic,spicy dal/curry."
In Hindi,Sandge are called " Dal ki Badi "or "Mangudi"
The ladies grind the different flours and create these fritters or dumplings and store them when vegetables are scarce during summers,these Mangudi/Sandges are used to create vegetables or a simple Dal curry,flavourful,wholesome and healthy.
In today's Recipe we are going to do something hatke ( different🙃) We are going to use Sandge flour to make a healthy dosa/pancake.
Q : WHY SANDGE/MANGUDI DOSA ?
1.Unlike Quinoa or different expensive millets which need to be brought from store,Sandges are homemade and are easily available,So just like Kellogs becomes multigrained
2.Because of it's health benefits :
It's a combination of many lentils like chana- dal ,moong- dal, urad dal,the combinations can vary according to different regions or states or recipes.Al these dals/lentils are high in Proteins and fiber which help in muscle - building,bone - health and Gut.[ chana,moong,urad,matki,toor ]
