Easy festive Recipes- Coconut u0026amp;Sweet potato Sweet(Barfi)

Ingredients

  • SWEET POTATOES : 2 BOILED AND MASHED
  • COCONUT : FRESHLY GRATED : 1 PC
  • MILK : 1 CUP
  • CARDAMOM : 1 PINCH OR A LITTLE LESS THAN 1/4 th TEASPOON

Instructions

  1. Boil the sweet potatoes, mash it and keep it aside.
  2. Grate the coconut and keep it ready, for this recipe we require freshly grated coconut as the moisture content is less compared to frozen, which is essential for making barfi (sweet)
  3. Take milk in a pan and heat it,now add sugar and cardamom powder to it and reduce it to a thicker consistency,Now add the mashed sweet potatoes to it and stir,keep stirring until you get a paste like consistency.
  4. Switch off the flame and allow the mix to come to room temperature, check the moisture content, if you find any moistness, reheat and remove all water,it is very essential that the paste is dry for folding into the shape we want.
  5. Now add the white grated coconut to this mix and fold,when mixed together ,take a plate and spread this mix evenly, keep it in the fridge for 15-20 minutes allowing it to set,remove it out and cut into pieces or pat it on your palms to make circular discs
  6. You can refrigerate it and serve it nice and cold as a sweet dish or also keep it on room temperature and garnish and serve in between the meals as side sweet dish.
