PEPPER CHICKEN.

Ingredients

  • Chicken : 1 kg with bone-in-piece Or Boneless according to your preference. Onion : Medium 4 Thinly sliced
  • Bay-leaf or Curry leaves : 3 to 5 Curry leaves Or 1,2 Bayleaves.
  • Bell Pepper : 5 to 6 medium sized cut into cube or bite-sized pieces.
  • Ginger garlic paste : 1 and 1/2teaspoon, Freshly minced to add more depth to the aroma.
  • Green chilies : 1 or 2 depending on the heat you require.
  • Cumin : Freshly grind : 1 Teaspoon.
  • Turmeric : 1/4th teaspoon.
  • Black pepper powder : 1/4th teaspoon.
  • Salt : According to your taste.
  • Oil : (You can use oil or Ghee) : 2 tablespoons .
  • Cashew : 9 to 10 whole grind and kept aside.
  • Sesame : 2 tablespoon.

Instructions

  1. Wash the chicken thoroughly and pat it dry. Keep aside.
  2. Let's prepare the vegetables, Chop the vegetables into bite size pieces
  3. Marinate: This step is optional. In a bowl whisk the following together in yogurt -lemon juice, Cumin powder,black pepper powder, turmeric and salt. Add the chicken pieces to it and let it sit for half an hour minimum.
  4. In a grinder,make a paste of the following to add in the recipe later : Onion, cashew, ginger-garlic, sesame seeds, black pepper powder (Optional, as previously added to the marinate)
  5. Cut the remaining onions in long thin slices, (Long sliced onions bring natural sweetness to the Recipe )
  6. In a frying pan or wok add Oil OR Ghee, 2 to 3 Bay leaf, Add the thinly sliced onions followed by the vegetables (You can use cubes of carrots, different colored bell peppers to add color and variations or any other veggies of your choice) Add the marinated chicken now,adjust the consistency and the spices, depending on the heat you want.
  7. Add water and allow it to cook for 10 minutes for the flavors to burst more.
  8. After 10 minutes please add the white paste from the grinder and stir nicely.
  9. Adjust the salt,cook the chicken till it has turned brown from all sides and the excess water has evaporated and you get a nice gravy like consistency.
  10. Garnish with Basil OR Cilantro, serve hot with chapati, Naan or White Rice.
