Ingredients
- 1 kilogram cut into bite sizeMutton/ Red meat
- 2 to 3 tablespoonGinger ( grated)
- Around 2 tablespoons.Garlic (crushed)
- Finely chopped 2 tablespoons.Coriander
- 1 bowlDesiccated coconut (Roasted golden brown.)
- 1 large or 2 medium.Onion( 2medium thinly sliced or 1 large )
- 2 tablespoonRed chilie powder
- 1 teaspoonGaram masala powder
- 2 tablespoonPoppy seeds [ Khas khas ]
- 1 tablespoonSesame seeds
- 1/4th to1/2 teaspoonTurmeric
- 1/2cupMeat broth
- 1 talespoonGhee
- 4 to 5 tablespoon.Oil [ Of your choice ]
- 1 to 2 smallBayleaf
- 1/2 inch -1Cinamon stic
- 3 to 4Black cardamom
- 1/2 teaspoonLemon juice [little to balance the taste ]
- 2 tablespoon.Golden fried onions
Instructions
- Clean the meat thoroughly under running water,remove all the impurities.
- As mentioned above keep the meat pieces bite sized,Rub salt,turmeric,add hot water and pressure cook for 8 quick whistles or till it is medium rare.
- Remove the meat from the cooker,Drain and separate the broth to make the meat dry.
- In a pan, Heat the oil once tempered Add the whole spices,Add the thinly sliced onions,green chillies,ginger - crushed garlic,coriander.turmeric,all the powdered spices and check for salt.
- Add half bowl of roasted coconut,half the quantity of poppy seeds,sesame seeds,mix all of the above ingredients well.
- Add the meat to it and 1/2 the quantity from the broth mix well,cover and cook on medium to low flame.
- After 10 minutes,remove the cover,check for doneness,if you find the meat hard,add more broth,if not keep the broth aside.
- The meat should be bit chewy or should have a bite[ You can completely make it tender by adding the remaining broth,depends on your preference]
- Once nearly done,Add the remaining part of roasted coconut,poppy seeds,You can also add Golden fried onions for extra crisspness.
- Add lime juice,green coriander,Ghee on top,Give a final stir Serve hot with Bhakri,Roti or Naan.

Chef's Notes
Instead of Red meat,You can choose Chicken,Egg or Fish also.
If using the same recipe with other veggies,tofu or Paneer,Check for the time of cooking,as it will vary.
A great side dish,Can be Refrigerated for 3 to 4 days.
In the Freezer,can stay Good for a week.
